CAKE WITH LEMON CURD

 In a medium pot, mix the egg whites, sugar, salt, lemon juice, and lemon zest to make lemon curd. Warm the lemon mixture over medium-low heat

Take it off the heat and add the cold, cubed butter slowly while whisking. Let the curd cool down all the way, and when you're ready to use it, put it in a pipe bag.
