Gochujang Kimchi Fried Rice

Gochujang kimchi fried rice is a flavorful and easy-to-make dish that is perfect for a quick and satisfying meal. It is a classic Korean dish that is made with gochujang (Korean chili paste), kimchi, rice, and other vegetables.

2 cups cooked rice.  1 cup kimchi, chopped. 1 onion, chopped.  2 cloves garlic, minced.  1 tablespoon vegetable oil. 1 tablespoon gochujang. 1 teaspoon soy sauce. 1/2 teaspoon salt. 1/4 teaspoon black pepper

Heat the vegetable oil in a large skillet or wok over medium heat.  Add the onion and garlic and cook until softened, about 5 minutes.

Add the gochujang, soy sauce, salt, and pepper and cook for 1 minute more.

Stir in the kimchi and cooked rice and cook, stirring constantly, until heated through, about 5 minutes. Serve immediately.

For a spicier dish, add more gochujang to taste. You can also add other vegetables to the fried rice, such as carrots, peas, or mushrooms.

 If you don't have gochujang, you can substitute 1 tablespoon of red pepper flakes or 1/2 teaspoon of cayenne pepper.
