Roasted Cilantro Lime Shrimp Recipe

This vibrant and flavorful dish is perfect for a quick and easy weeknight meal or as an appetizer for a special occasion.

The shrimp are marinated in a simple mixture of lime juice, cilantro, garlic, and spices, then roasted to perfection.

1 pound large shrimp, peeled and deveined. 1 tablespoon olive oil. 1/4 cup lime juice. 2 cloves garlic, minced. 1 tablespoon chopped fresh cilantro. 1/2 teaspoon chili powder. 1/4 teaspoon cumin

Preheat oven to 425°F (220°C). In a large bowl, combine shrimp, olive oil, lime juice, garlic, cilantro, chili powder, cumin, paprika, salt, and pepper. Toss well to coat the shrimp evenly.

Marinate for at least 15 minutes, or up to 30 minutes for extra flavor. Transfer the shrimp to a baking sheet in a single layer.

Roast for 8-10 minutes, or until shrimp are pink and cooked through. Serve immediately with your favorite dipping sauce, such as avocado crema, salsa, or lime wedges.
