How To Grill Zucchini

Grilling zucchini is a fantastic way to enjoy this versatile summer squash. It's quick, easy, and results in a flavorful side dish or vegetarian main course. Here's a comprehensive guide to grilling zucchini:

Preheat your grill or grill pan to medium-high heat. Aim for a temperature between 400 and 450°F.

Prepare the zucchini: Wash and dry the zucchini. You can either slice them into rounds, half-moons, spears, or planks. Aim for a thickness of about 1/4 inch.

Marinate (optional): In a bowl, combine olive oil, red wine vinegar (if using), oregano, salt, and pepper. Toss the zucchini slices in the marinade for 15 minutes, or up to 30 minutes for deeper flavor.

Grill the zucchini: Place the zucchini slices on the preheated grill grates. If using a grill pan, lightly oil the pan first.

Cook for 4-5 minutes per side, or until tender and grill marks appear. You may need to adjust the cooking time slightly depending on the thickness of your slices.

Garnish and serve: Transfer the grilled zucchini to a plate. Season with additional salt and pepper to taste. You can also garnish with fresh herbs, chopped nuts, crumbled feta cheese, or a drizzle of balsamic glaze.
