Strawberry Cheesecake Oreo Bars

The crust and topping are made of golden Oreos. The vanilla cookie-flavored baked cheesecake is creamy.

Crust first: Crumble the Oreos. Mix with melted butter in a small bowl. Step 2: Line an 8x8 pan with parchment. Press the crumbs into the pan for a strong base.

Step 3: Bake crust for 10 minutes. While making the cheesecake, let it cool on the counter. Step 4: Cheesecake: Beat cream cheese in a mixer. Beat white sugar in. Fluff it.

Step 5—Add sour cream, heavy cream, and vanilla. Beat on medium speed, scraping the bowl. Smooth combination.

Step 6: Pour cheesecake over crust. Bake 45-50 minutes. The edging is golden brown. Before refrigerating, chill the cheesecake fully on the counter.

Step 7—Make strawberry sauce: Combine strawberries, lemon juice, water, sugar, and cornstarch in a saucepan over medium heat. Blend well. Stir after simmering for 8-10 minutes. 

Strawberries shrink and release juice. Mixture will thicken. That indicates readiness. Keep heat under 10 minutes. Pour sauce over cheesecake after letting it cool.

Step 8—Chill the cheesecake pan overnight in saran wrap. Cut squares. Add Oreos. Keep cold. Enjoy!
